Adzhapsandaly is very famous dish from Georgia cuisine. It is hard to pronounce, but so easy to enjoy. It is cold appetiser. But also could be serving hot with pita (or fresh bread, or rice, or mash potato). The dish is time consuming, but definitely the result is tasty.

Ingredients:

• 2 -3 Eggplants, sliced 1 cm thickness, salted for 30 min. and flushed 1 kg/ 2 LBS

• 2 Carrots, sliced thinly 500 g / 2 LBS

• 3-4 bell pepper, sliced 500 g / 2 LBS

• Spicy red pepper, seedless (option)

• 2 head of onion, sliced half-moon 250 g / ½ LBS

• 2-3 tomatoes, grind 800 g / 2 LBS

• 1 bunch of parsley, chopped 50 g / 4 oz

• 1 bunch of purple basil, chopped 50 g / 4 oz

• 1 bunch of coriander 50 g / 4 oz

• 3-5 gloves of garlic

• 1 tsp. of ground coriander

• 1 tsp. of ucgho-sunely (spice from Georgia) - option

• Salt and black pepper for seasoning

• 6 tbsp. of vegetable oil for fry

Directions:

For 4 L cast-iron pot

1. Add vegetable oil to the fry pan and setup on medium heat

2. Add eggplants slices and fry on medium heat to browning 2-3 Min for each sides

3. Add cooked eggplant to the cast-iron pot

4. Fry bell pepper slices on medium heat for 10-15 Min. and add to the cast-iron pot

5. Fry carrot and onion on medium heat for 15-20 Min. and add to the cast-iron pot

6. Grind tomatoes and add to the cast-iron pot

7. Stew chopped parsley and basil for 2-3 Min. and add to the cast-iron pot

8. Grind garlic and green coriander and add to the cast-iron pot

9. Add dry spices to the cast-iron pot

10. Stew the cast-iron potfor 10-15 Min. on the low heat

11. Add salt and ground black pepper and mix
