This dish is easy to cook and the result is new taste and healthy meal. Apple and dry plum give new taste of smoke bacon and potato.
We can skip bacon, sour cream and mayo and the dish could be vegetarian with interesting combination of taste.

Bake Potato with Apple, Dry Plum and Bacon

Bake Potato with Apple, Dry Plum and Bacon

Ingredients:

• 8 medium Russet potatoes, peeled 1000 g
• 300 g smoke bacon, (or bake pork, or any sliced ham)
• 1 apple, sour, sliced in 8 pieces 160 g
• 12 dry plumes, 200 g
• 1 bell pepper, sliced in 8 pieces 150 g
• 8 tsp. of mayonnaise
• 4 tbsp. of vegetable oil
• Baby dill
• Salt and black pepper to season
For serve
• Baby dill and onion
• 1 tbsp. of Sour cream per serve (option)
• 1 tbsp. of Sour cream per serve (option)
• 1-2 gloves of garlic (option)

Directions:

For 1 portion in foil:
1. Potato, peeled, cut in half
2. Spread with vegetable oil and salt
3. Add 1-2 slices of bacon
4. Add 1 peace of bell pepper
5. Add baby dill
6. Add 1 tbsp. of mayonnaise
7. Add 2-3 dry plums
8. Wrap in foil
9. Repeat it with the rest of potatoes
10. Place it on the backing tray
11. Back it in the oven with 180 C / 380 F for 60 min.
12. Serve each with 1 tbsp. of sour cream, pressed garlic and add chopped baby dill and green onion
