The following recipe is pretender (just) to be the classic. If you can find in the ingredients of the recipe pickles, mushroom, garlic, mustard, vine, cognac, Worcestershire sauce and so on, it is not Beef stroganoff. Or we can name it as Beef stroganoff with pickles, mushrooms, garlic, mustard and so on.

This recipe of meat with sour cream sauce was invented in Odessa and named as Beef from the earl Alexander Stroganoff who lived in Odessa and was Governor General of Novorossiia and Bessarabia in 1854-1863. Odessa still has the bridge and street with his name. He was also the first honorary citizen of Odessa (1862). The chef, who worked for Stroganoff’s family, cooked also for free access eatery at the Stroganoff’s estate (Stroganoff was philanthropist). Any well-dressed visitor can eat there. The sauce cans easy masking the meat and meat could be any. As history delivered, starving visitors was happy.

• 300 g of veal (beef sirloin or pork), cut into thin strips 300 g / 11 oz
• 1 head of the onion, half-moon sliced 150 g / 8 oz
• 1 tomato, grinded (or 2 tbsp. of tomato paste) 150 g / 8 oz
• 1 tbsp. of flour all-purposed 8 g /
• 150 ml of sour cream, 14 % 150 ml / 5 fl oz
• 100 ml of whipping cream 100 ml / 3.4 fl oz
• 1 tbsp. of vegetable oil for fry 15 ml / 0.5 fl oz
• 2 tbsp. of butter for fry 30 g / 1 oz
• 2 bay leaves for seasoning
• Salt and black pepper for seasoning


1. Heat the oil and butter in a wide deep fry pan over medium-high heat.
2. Add onion and half cooking uncovered for 5 - 10 minutes
3. Toss the beef with the flour and add to the pan on top of the onion. Do not mix it. Meet should be on the bed from onion in one layer and steamed without touching the hot pan.
4. Seasoning with black pepper
5. Cooking uncovered for 10 - 15 minutes
6. Add grind tomato, mix well
7. Add sour cream and cream. Mix.
8. Bring up to a simmer, cooking uncovered for 15 - 20 minutes (depend of meet) until the meat is tender.
9. Add bay leaves, salt and black pepper
10. Serve with potato and sweet-sour pickles
