Bell Pepper Salad (Lecho)

Bell Pepper Salad (Lecho)

Ingredients:

• 5 Bell Peppers, sliced (1 kg / 2.5 lbs)
• 1 onion, big, peeled, chopped (300 g / 11 oz.)
• 1 tomato paste can (370 ml / 18 lq oz)
• 100 ml water
• 2 tbsp. vegetable oil for frying
• ½ tbsp. of salt to test
• ½ tbsp. of sugar to test (6 g / 0.2 oz.)
• 2-3 cloves of garlic

Directions:

Large fry pan.
1. Fry 1 onion (big, peeled, chopped) till browning in vegetable oil
2. Add 5 sliced Bell Peppers
3. Mix well
4. Cook mixture for 20 min, medium heat
5. Add tomato paste with water
6. Stew for 20 min, medium heat. Bell pepper should be tender
7. Add pressed garlic
8. Cool it out
