This Carrot Salad is most popular salad in my city Odessa in Ukraine, and not only there. On the public market you can easy find local Koreans who is sailing this spicy colourful salad. Most Ukrainian holiday tables have this salad. It is perfectly match with meat and sausages. And it is really healthy dish, especially for your eyes (because of the carrot’s carotene 
С40H56).

Carrot Salad with Coriander and Garlic

Carrot Salad with Coriander and Garlic

Ingredients:

• 2 Carrots, big, sliced thinly 800 g / 2 LBS
• ½ tbsp. of sugar for seasoning
• 1 tbsp. of salt for seasoning
• 1 tsp. of ground coriander
• 3-5 gloves of garlic, pressed
• 1 tsp. of ground black pepper for seasoning
• 2 spicy red chilli, seedless (option)
• 1 tbsp. of vinegar
• 2 tbsp. of vegetable oil

Directions:

For 4 L cast-iron pot
1. Add sliced carrot
2. Add salt and sugar and wait 10-15 min. till juice will come
3. Add 3-5 gloves of garlic, pressed
4. Add 1 tsp. of ground coriander
5. Add 3-5 gloves of garlic, pressed
6. Add 1 tsp. of ground black pepper for seasoning
7. Add 2 spicy red chilli, seedless (option)
8. Add 1 tbsp. of vinegar
9. Add 2 tbsp. of vegetable oil
10. Mix well and keep in refrigerator overnight. Or eat it right away.
