There’re a lot of recipes for goulash. It is may be not less than Ukrainian Borscht. This version is what I like.
It is really tasty, colourful and not complicates to cook dish.

Ingredients:

I use 3 liter oval roaster
• 900 g of meat (I used pork, beef or lamb is fine) 900 g / 2 lbs
• 4 potato, peeled, cubes, (1 chopped really well) 800g / 2 lbs
• 1 head of onion, peeled, chopped
• 2-3 tbsp. of paprika
• 2 sweet peppers 300 g / 1 lbs
• 2 tomatoes, peeled 300 g / 1 lbs (option)
• 1 bay leaf
• 5 black peppercorns
• 2 tbsp. of vegetable oil for fry
• 2 tbsp. of salt to taste
• 3 gloves of garlic

Directions:

1. Cut meat by 100 g pieces
2. In the 3 L oval roaster fry meat with 1 tbsp. of vegetable oil for 10-15 min.
3. Separately fry chopped onion
4. Mix fried meat and onion
5. Add 3-4 cups of hot water to the oval roaster with fried meat and onion
6. Add 1 bay leaf
7. Stew it until meat will be tendered (depend of selected meat)
8. Add potatoes
9. Stew until potatoes will be tendered
10. Add 2-3 tbsp. of paprika to 1 cup of hot water
11. Add paprika/water mixture to the oval roaster
12. Add peeled chopped tomatoes (option)
13. Add chopped sweet pepper
14. Stew for another 10-15 min.
15. Add chopped garlic and turn off the stove.
Serve with chopped parsley.
