Low calories healthy soup with spring season taste. Spring seasonal greens are coming and it is time to enjoy it.  We can name it “Spinach soup” as well. It is match with vegetation diet.

For 4 L pot:
• 2 litres of pure water, about
• 2-3 potatoes, Russet, medium, peeled, cubes. 300 g / 11 oz
• 1 head of onion, medium 200 g / 7 oz
• 1 bay leave
• 2 bunches of spinach, cut (or 1 bunch of spinach and 1 bunch of dock (it is almost impossible to find in Vancouver)) 700 g / 2 LBS
• 1 bunch of baby dill 250 g / 9 oz
• 1 bunch of parsley 200 g / 7 oz
• 2 bunches of green onion 200 g /
• 2 tsp. salt to taste
• 1 tbsp. of sour cream to serve 30 g / 1 oz
• 1 boiled egg, chopped to serve


1. Add 2 liters of water into a 4-liter pot, bay leaf. Place it on the stove and start to boil water.
2. When water start to boil, reduce heat to medium.
3. Add cubes of potatoes and well-chopped onion to boiled water and cook it until you will have almost tender potatoes (cooked around 20-30 minutes).
4. Add the rest of chopped greens
5. Mix it well.
6. Simmer on the medium heat until start to boil (around 15 minutes).
Serve with sour cream and chopped boiled egg
Never add water at the end of the cook process. It is completely killing taste.
