The meal is very easy to cook for a happy breakfast.
My mom made it at the weekend, in a very good morning.
It is a very gentle taste with light sour. Good match with hot sweet tea.

Lazy Cheese Dumpling (Lenivie Vareniki)

Lazy Cheese Dumpling (Lenivie Vareniki)

Ingredients:

• 500 g cottage cheese, soft 3.25% (500g / 1 lb.)
• 2 eggs
• 1 ½ - 2 cup of flour, all-purpose (250g / 10 oz.)
• 2 tbsp. of sugar to test (25g / 1 oz.)
• 1 tsp. of vanilla extract
• ½ tsp. of salt to test (if cottage cheese is unsalted)
• ½ cup of raisins, chopped
• 1 tbsp. of sour cream to serve (8g / 0.3 oz.)

Directions:

I use 3L bowl for dough
1. Add 500 g cottage cheese, unsalted
2. Add 2 eggs
3. Add 1 ½ - 2 cup of flour
4. Add ½ cup of raisins, chopped
5. Add 2 tbsp. of sugar
6. Add 1 tsp. of vanilla extract
7. Add ½ tsp. of salt to test (if cottage cheese is unsalted)
8. Knead dough
9. Form roll and flat it
10. Cut in small pieces
11. Boil it in lightly salted water 5-7 min (It should float on the surface)
Serve with sour cream or any fruit jam
