This soup you can enjoy at a restaurant around Helsinki, Finland. Or you can cook it at home. It is simple, tasty, fast and good to have on the next day. Lovely. Fish soup number one. Thank you, Finland.

Lohikeitto – Finnish Salmon Soup


• 2 L water
• 1 Lb salmon with skin and bonds / 500g
• 3-4 potato, white, Russet 1 Lbs / 600g
• 1 onion / 200 g
• 2 cup / 500 ml cream 11%
• Salt and black pepper to taste
• Baby dill (option)


1. In the 3 L pot add 2L water, whole onion and salmon
2. After boil cook it for 10 minutes
3. Take salmon out and chill it, separate bond and skin and tear it into small pieces (a fork will be helpful)
4. Peel out the potato and do not cut (the key part of the taste of the soup)
5. Add peeled whole potato to the pot after salmon and cook it for about 20 minutes
6. Take out the cooked onion and slightly mash potato in the pot
7. Add cooked boneless, skinless and tore salmon and 2 cups of heavy cream
8. Boil it for 5 minutes.
9. Add salt and black pepper to taste
10. Serve it with chopped baby dill and rye bread.
