I tried to figure out how to make a pasty, traditional Ukrainian dish, stuffed with sauerkraut.
Here is the result. It is tasty,soft, looks perfect and does not take a lot of time to cook.

It is good to serve with Borscht as well as with sweet black tea.

Pasty with Sauerkraut (Pirozhok s kapustoi)

Ingredients:

For dough:
• 1 cup of milk (250 ml / 9 fl oz.)
• ¼ cup of sugar (100 g / 3.5 oz.)
• ¼ cup of butter (60 g / 2 oz.)
• 1 eggs
• ½ tsp. of salt to test
• 5 cups of flour (500g / 18 oz.)
• 8 g of dry east
• 1 tbsp. of vegetable oil (15 ml / 0.5 fl oz.)
For stuffing:
• 300 g Sauerkraut (½ of 750 ml jar / 1 lb.)
• 1 big onion, peeled, chopped (200 g / 7 oz.)
• 1 tbsp. of vegetable oil (15 ml / 0.5 fl oz.)

Directions:

For stuffing:
On the fry pan
1. Add 1 tbsp. of vegetable oil
2. Add 1 peeled chopped big onion
3. Browning onion
4. Add ½ jar of Sauerkraut
5. Browning mixture
6. Cool it out
Making dough:
1. In the 1 L pot
2. Add 1 cup of milk
3. Add ¼ cup of sugar
4. Add ¼ cup of butter
5. Add 1 egg
6. Mix well
7. Heat it to 35°C / 65°F (You can feel comfortable temperature when touch)
In the 3 L bowl
1. Add 2 cups of flour through bolter
2. Add 8 g of dry east
3. Mix well
4. Add worm mixture
5. Knead dough for 10-15 min.
6. Add 1 tbsp. of vegetable oil and knead dough for a minute
7. Dough should be soft
8. Leave dough in the bowl under plastic wrap for 2 hours in the worm place (ideal with 28°C / 82°F, but not less than 18°C / 65°F )
9. When dough will double increase volume, press it down and leave for another ½ hour
10. Dough should again double increase volume
11. Form balls from dough with size like ping pong ball
12. Make it flat, and round
13. Put stuffing in the middle and form accurately a pasty
14. Form all of them and place it on the bake sheet with wax paper
15. It should be enough room in between, because pasties will increase the size almost double
16. Leave it for 30 min.
17. Brush the top of each pasty with whipped row egg
18. Preheat the oven to 200°C / 400°F
19. Bake sheet with pasties for 15-20 min.
