It is my favorite vegetable delicious side meal. The dish is really tasty as warm and as cold. Healthy and looks good. Very easy to cook, just dump everything to the fry pan and wait for the result.

Potatoes with Bell Pepper

Potatoes with Bell Pepper

Ingredients:

• 3 potatoes, peeled, cut as for fry 450 g / 1 lbs
• 1 carrot, big, cut 150 g / 5 oz
• 1 head of onion 150 g / 5 oz
• 3 fresh tomatoes, peeled 300 g /
• 3 big sweet (red or yellow) bell peppers, chopped 300 g /
• Salt to test
• 2 tbsp. of vegetable oil 30 ml / 1 fl oz

Directions:

In the 2-3 L deep fry pan
1. Add 2 tbsp. of vegetable oil
2. Add cut potatoes (like for fry)
3. Add cut carrots (half-moon)
4. Fry on the medium heat until potatoes are almost tender (15-20 min.)
5. Add chopped onion and mix
6. Fry another 10 min
7. Add cut tomatoes and mix
8. Add cut bell pepper and mix
9. Fry under lead for another 15-20 min
10. Add salt to taste
