We have the season of Salmon and red caviar (salmon roe). It is the most recognizable appetizer in Ukraine and Russia. It looks nice, the taste is delicious and it is good follower after vodka. That is not all what we can say about this healthy dish. Now it is time for Vancouver’s salmon. But fishing is a different story.

Red Caviar (Salmon Roe)

Red Caviar (Salmon Roe)

Ingredients:

• 4 LBS Salmon roe 2 kg
• 2 (4) tbsp. of salt to taste
• 2 tsp. of sugar to taste
• patience

Directions:

Take the raw roe and gently separate the “balls” from the rest. I am doing this under current hot water with big glass bowl. Clean it as much as you can. The ideal result is when in the container you can see only nice orange balls, nothing else. The total volume of clear roe could reduce from 4 LBS/2 kg to 3 LBS/ 1.5 kg
Marinade:
In 1 L container
1. Add 2 (4) tbsp. of salt to taste
2. Add 2 tsp. of sugar to taste
3. Add 1 L of Hot water
4. Drain as much as you can water from the container with roe
5. Add 1 L of hot water with salt and sugar to the bowl with roe and gently mix
6. Wait for 20 min (for low salt result) or more (you can periodically taste for salt )
7. Drain all liquid
8. Fill glass container with red caviar, add olive oil on top to preserve.
9. Store in the refrigerator not more than two week, (easy to follow. It will use faster).
