Thin pancake stuffed with cottage cheese and raisin is the common dish for a meat-free diet. It is a tasty way to eat healthy milk products. Also, a cup of black or green tea is well matching with this dish as well as sour cream.

Ingredients:

Pancake:
• 2 cups milk 1% / 500 ml
• 1 cup boiled water / 250 ml
• 2 large eggs / 120 g
• 3 tbsp vegetable oil / 45 ml
• 2 tbsp sugar / 35 g
• ½ tsp salt
• 1 ½ cup flour white, all-purpose / 190 g
• 1 tbsp. vegetable oil for fry / 15 ml
Stuffing:
• 200 g cottage cheese, soft
• 50 g butter, unsalted
• 25 g raisin
• 1 ½ tbsp. sugar
• 8 g vanilla sugar

Directions:

1. Warm 0.5 milk, do not allow to boil
2. Add 2 eggs into milk and mix
3. Add 2 tbsp. sugar and mix
4. Add ½ tsp salt
5. Add 1 ½ cup flour white, all-purpose and mix
6. Add 1 cup boiled water and mix
7. Add 3 tbsp vegetable oil and mix
8. Mix well. The mixture should be as buttermilk.
9. Warm fry pan (Heat 4 from 9) (It is better to use cast iron with size as a plate) with very little vegetable oil
10. Fry very thin mixture for 2-3 minutes for each side (you will have at the beginning to make it thin all over the pan. Practice is a key to solve a problem)
11. Make around 16 thin pancakes.
12. Keep it on the plate under the lead, before start stuffing.
13. For stuffing add melted butter, cheeses, sugar, raisin and vanilla sugar.
14. Mix well
15. Stuff thin pancakes with stuffing mixture and make any shape of pancake (roll it, square it, etc.)
Better to service it warm with sour cream and a cup of black tea.
