It is good to serve as side dish or appetizer salad. It is traditional Ukrainian/Russian winter/fall salad. There are poor vegetarian ingredients. It could be the main dish with fresh bread.

Vinaigrette Salad (Vinegret)

Vinaigrette Salad (Vinegret)

Ingredients:

• 3 potatoes 450 g / 1 lbs
• 1 carrot big 150 g / 5 oz
• 2-3 beets, dark deep color 300 g / 10 oz
• 3-4 pickles 200 g / 7 oz
• ¼ head of onion 50 g / 2 oz
• Salt to test
• 2 tbsp. of vegetable oil 30 ml / 1 fl oz
• 2 tsp. of vinegar
• ½ cup of canned peas or canned navy white beans (option) 150 g / 5 oz

Directions:

Pre-cook ingredients:
Boil carrots, potatoes and separately beets
Let them cool down to room temperature and peel
Cut to the small cubes all ingredients
In the 2-3 L deep bowl
1. Add cut beets
2. Add 1 tbsp. of sunflower oil and mix well
3. Add cut potatoes
4. Add cut beets
5. Add cut carrots
6. Add cut pickles
7. Add chopped onion
8. Add 1 tbsp. of vegetable oil
9. Add 2 tsp. of vinegar to taste
10. Add salt to taste
11. Add ½ cup of canned peas or canned navy white beans (option)
Note: Good to serve with mayonnaise
